SANDWICH BAR REOPENING TO CREATE 8 TO 10 JOBS
O’Brien’s Sandwich Bar is to reopen in Fermoy on Holy Thursday, April 1 under the new ownership of Paul and Mark Hayes.
The two young brothers from Wexford are taking a leap of faith taking on such a venture at a difficult time for the economy but they’re confident of success.
They are opening O’Brien’s, but this time with a twist. “It is going to be O’Brien’s incorporating The Bagel Factory and including Rachel Allen’s signature sandwiches. You are basically going to have two restaurants incorporated in one and Rachel Allen’s delicious sandwiches into the bargain,” Paul told The Avondhu.
The two brothers certainly seem to know what they are about as their family owns three other O’Brien’s Restaurants, two in Wexford and one in Waterford. The whole family have rowed in behind the Fermoy effort to carry out renovation work in advance of the opening on April 1.
Why come all the way from Wexford to Fermoy, you may ask yourself?
Both Paul and Mark have done their homework and researched the town’s dynamics. “Fermoy comes across as a great place to do business. The streets are always busy and it’s a very homely town,” Paul says.
Talking about growing up in the business and the values the family feels strongly about, Paul tells The Avondhu, “We were raised on O’Brien’s. We know how to butter the bread and talk to people. People want to see a pleasant face behind the counter, and our main priority is customer service. It is key to it all. We are also big on cleanliness".
"We hope to create 8 to 10 jobs in Fermoy and we are proud to do it. We have a sign in the window advertising the positions and we want people to come in and enquire about the jobs. We intend to become part of the community and we want to hire people who are part of the community. We have a good ethos. We know how to talk, sell and get on with people,” Paul concluded.
The new O’Brien’s will be offering €1 sandwiches for an introductory period to give people a chance to come in, and take in all the changes and exciting offers on the menu. Paul and Mark Hayes are hoping in time also to invite Rachel Allen to come and promote her sandwiches. It all sounds delicious, refreshingly new and so promising.
